The Saturday Kitchen team were in raptures over our delicious Summer Cup. Drinks expert Helen McGinn mixed the Summer Cup with ice and soda water, which really let the rhubarb flavour shine through. We also love it with tonic - but if you prefer a sweeter take then use lemonade.
The recipe for the Summer Cup dates back to 1904 when the Reverend Hubert Lester created this quintessential summer drink using fruit from the vicarage garden. His great-grandson Thomas Lester has recreated and improved the recipe, creating a burst of fruit flavours by combining rhubarb, plums, pomegranate and cranberries.
The Reverend Hubert Summer Cup is perfect mixed with tonic, soda water or lemonade. And it couldn't be quicker or easier to make. First add plenty of ice to a glass, then pour a generous measure of the Summer Cup, add your favourite mixer and stir with a rhubarb stick. Add sunshine and a crowd for the perfect afternoon.
